- Purchase desired size whole trimmed beef tenderloin.
- Season with extra virgin olive oil, salt, and pepper before searing in a hot pan until rare.
- Allow tenderloin to cool.
- While it’s cooling, sauté 3 cups of your desired mushroom with 2 diced garlic cloves, 1 bunch of parsley, 2 diced shallots, 1 stick of unsalted butter, salt and pepper. *Truffle butter can be used in place of regular butter.
- Allow to cool and spread the mixture over the tenderloin coating it fully.
- Lay out pastry dough and roll the mushroom-coated tenderloin into it, sealing it with egg wash.
- Score dough and bake for one hour at 375 degrees or until dough is crispy.
- Slice and serve the Beef Wellington with a glass of Origin wine. Enjoy!
