Beef Wellington

  1. Purchase desired size whole trimmed beef tenderloin.
  2. Season with extra virgin olive oil, salt, and pepper before searing in a hot pan until rare.
  3. Allow tenderloin to cool.
  4. While it’s cooling, sauté 3 cups of your desired mushroom with 2 diced garlic cloves, 1 bunch of parsley, 2 diced shallots, 1 stick of unsalted butter, salt and pepper. *Truffle butter can be used in place of regular butter.
  5. Allow to cool and spread the mixture over the tenderloin coating it fully.
  6. Lay out pastry dough and roll the mushroom-coated tenderloin into it, sealing it with egg wash.
  7. Score dough and bake for one hour at 375 degrees or until dough is crispy.
  8. Slice and serve the Beef Wellington with a glass of Origin wine. Enjoy!
