- Purchase mushrooms locally or from Mighty Cap Mushroom in Paso Robles.
- Roughly chop the mushrooms into bite-size or smaller pieces.
- Finely dice 2 shallots, 1 clove garlic, 1 bunch parsley, and zest your 2 lemons.
- Heat olive oil in a saute pan and add most of the shallot, all garlic, and all mushroom.
- Stir and brown, add salt and pepper, and 3-4 dashes of white wine towards the end.
- While it is cooling, place a small wheel of brie cheese into a pot with equal parts heavy cream.
- Add the last small amount of shallots and salt and pepper and melt it all together.
- Place mushroom mix onto a piece of toast or bouchée of choice, topping with a small dollop of the brie cream sauce.
- Bake it for 2-3 mins at 350º to melt it all together.
- Garnish with diced parsley over the top of Mushroom Vol-au-vent and serve with Les Deux Frères.
