ORIGIN
From the beginning, the Fabre brothers knew they wanted the BENOM Collection to focus on Cabernet Sauvignon and Cabernet Sauvignon blends; thus, Origin was born.

THE STRUCTURE
Deep-rooted in the clay and limestone of the west side, this polished expression of the nascent Paso Robles terroir is extraordinary. This wine is characterized by a meticulous approach to Cabernet Sauvignon grown in Paso. An elegant Bordeaux style with minerally driven tannins and an opulent finish, Origin’s refined and enchanting aromas never cease to enliven and captivate the senses.

Tasting Notes
Origin catches the eye with a striking dark ruby color in the glass. On the nose, it offers a rich bouquet of ripe plum, warm spices, and cassis. The first sip reveals dark black cherry and an herbaceous quality that adds depth and freshness. As you take a second sip, the wine’s complexity unfolds with emerging notes of crushed black peppercorn and black fruits. The velvety mouthfeel and integrated tannin structure bring an elegant yet balanced finish.

Food Pairing
Beef Wellington
This Beef Wellington recipe by Chef Justin Monson presents a succulent beef tenderloin, adorned with a medley of mushrooms, parsley, garlic, shallots, and butter, enrobed in layers of delicate puff pastry baked to perfection. The tender texture and protein from the beef tenderloin mixed with the richness of the mushrooms and pastry dough cut the strong structure and tannins often associated from a Cabernet Sauvignon like Origin. Together, they create a symphony of taste that elevates the dining experience to perfection.
