ORIGIN

From the beginning, the Fabre brothers knew they wanted the BENOM Collection to focus on Cabernet Sauvignon and Cabernet Sauvignon blends; thus, Origin was born.

Tasting Notes

The 2018 Origin is 100% Cabernet Sauvignon that saw 18 months in French oak. Its dense purple and ruby color is followed by deep notes of crème de cassis, black raspberries, cedary spice, tobacco, and chocolate. With a medium to full body, there is a ripe, textured, and balanced structure with strong tannins and a great finish.

Food Pairing

Flat Iron Steak

Chef Spencer Johnston's recipe for flat iron steak presents an exquisite harmony of flavors, pairing succulent roasted steak cooked over oak with crispy, smashed potatoes, seared summer squash with alliums and oregano, and a sauce vert. Designed as the quintessential fall dinner, this dish showcases seasonal vegetables alongside perfectly grilled steak, creating a culinary masterpiece that embodies the essence of the season. In order to enjoy this meal to its fullest, pair it with a glass of Origin to round out the dish.
