Tasting Notes
A refined, textured wine, Origin 2021’s deep burgundy radiates in the glass. The nose is teased by cherry vanilla, licorice, and cola. Coffee cake with a dark cedar and floral fragrance fills the glass with a soft aroma. The wine is elegant and structured with round, polished, and silky tannins expressing the longevity of aging potential. Chocolate cherry and cassis swirl together on the palate with a long, drawn-out finish hinting at sun-baked river stones, dried green herbs, and Adzuki red bean paste.
Food Pairing
Beef Wellington
This Beef Wellington recipe by Chef Justin Monson presents a succulent beef tenderloin, adorned with a medley of mushrooms, parsley, garlic, shallots, and butter, enrobed in layers of delicate puff pastry baked to perfection. The tender texture and protein from the beef tenderloin mixed with the richness of the mushrooms and pastry dough cut the strong structure and tannins often associated from a Cabernet Sauvignon like Origin. Together, they create a symphony of taste that elevates the dining experience to perfection.
