Miso Charred Waygu Beef Loin with Tarragon Aioli

  1. Whisk the miso marinade ingredients together in a small bowl. Coat the steaks evenly and refrigerate for 4 hours.
  2. Whisk egg yolks, garlic, and a pinch of salt until creamy. Slowly add olive oil and finish with tarragon.
  3. Sear the steaks over a wood or gas grill on both sides and cook to 130 degrees Fahrenheit for medium rare. Rest the meat for 10 minutes. Slice and plate with the tarragon aioli.
  4. Serve with a glass of Origin and enjoy!
