The Fabre brothers set out to create a “different & eclectic” collection of wines to add to the wide variety of offerings in Paso Robles by combining their French family heritage with the power of Paso Robles fruit.

100% Cabernet Sauvignon
Our flagship cuvée, Origin was designed to showcase Cabernet Sauvignon’s outstanding potential here in Paso Robles. Its 5th vintage features four of the top Cabernet producers in the area with fruit from Hawks Hill Ranch, Parrish Family Vineyard, Jada & Gateway. Fermentation this year utilized a combination of stainless steel and concrete tanks with gentle pumpovers twice a day. Once barreled down, this wine matured for 18 months in 70% new French oak.
Dark ruby in color, Origin shows gorgeous notes of red cherry, plum, leather and toasted nutmeg. Medium to full in body, it’s silky in texture from start to finish with fine yet gritty tannins that will drink beautifully for the next 15+ years.
52% Grenache, 26% Cabernet Sauvignon & 22% Tempranillo
The most delicate wine in our collection, this blend is designed to highlight the feminine characteristics of Grenache, while using Cabernet & Tempranillo to bring in a masculine structure. Grenache hails from G2 & Paderewski with Tempranillo coming from Caelesta. Stainless steel fermentation with gentle pumpovers twice a day ensured delicate extraction before transferring to 5% new French oak for 18 months.
Les Deux Frères’ bright ruby coloring is followed up by raspberry jam, red and black berries, baking spice and licorice. Light to medium in body, delicately structured, fresh and bright with a lingering finish of cocoa & crème de cassis that will develop beautifully for the next 10+ years.
30% Graciano, 29% Mourvèdre, 26% Syrah & 15% Cabernet Sauvignon
The second vintage of this blend saw a big shift – trading 2018’s Grenache for a cool climate Syrah from Spanish Springs to bring more richness & texture. Mourvèdre was selected from G2 while Graciano hailed from Paperstreet. Once processed, each lot fermented in stainless steel where they saw gentle pumpovers twice a day before being barreled down in 40% new French oak for 18 months.
The rich violet hue of Lapsus opens up to sensuous notes of violet, jasmine, red fruit and green tea. Dense yet beautifully balanced, it is medium to full bodied on the palate with a finish of white pepper and candied orange peel. This wine is drinking incredibly well in its youth and will continue to develop for another 15+ years.

Contrast is arguably our most captivating cuvée due to its unexpected assemblage of Chardonnay & Sauvignon Blanc. Since day one Solomon Hills has been our Chardonnay producer, while Parrish Family has farmed our Sauvignon Blanc. Both varieties were pressed off immediately after sorting and transferred to a mix of new and used French Oak to ferment before aging for 6 months in 20% new French Oak.
Contrast is characterized by a pale yellow gold coloring. Vibrantly aromatic, its nose explodes with notes of Meyer lemon zest, guava and honey framed by a fresh minerality. Bright on the front of the palate, Contrast opens up to a silky, mouthcoating texture and mineral-driven finish.
78% Grenache, 22% Cabernet Sauvignon$35
Our 2021 vintage of L’Essor continues to be a blend of primarily Grenache followed by Cabernet Sauvignon. This year brought in new producers for Grenache, with fruit from Caelesta, Coakley & Rolph Family. Grenache for L’Essor is a purposeful pick and directly pressed after sorting to achieve our pale, rose gold coloring. The Cabernet came from Parrish Family Vineyard and is a saignée of Origin with 10 minutes of skin contact. The varieties both fermented & aged separately in stainless steel before bottling
L’Essor features a delicate & vivid pale rose gold coloring. Its bouquet is fresh with notes of strawberry, citrus blossom and ocean spray. This wine is clean and bright, a hint of dark spice develops on the back of the palate with a textured, fresh finish. This rosé is crafted to be enjoyed now!
