Cellaring & Serving

Cellaring
Choosing how long to cellar your wines is up to your personal tastes and the type of wine. Follow these useful tips to determine how long you should be cellaring wines.
Aging
We recommend waiting at least a few months after receiving our wines before opening the bottle for the reds. For the white, you may choose to lay it down, but it is great young. For the rosé, we recommend drinking it young.
Temperature
Once the wines are home, we advise keeping your wine fridge at a constant temperature between 55ºF and 60ºF for all types of wine or keeping the bottles in a cool dry place that doesn't exceed 60ºF.
Chart
If you enjoy your wines with more primary notes, drink them within five years. If you prefer secondary and tertiary notes, wait at least six years from the vintage. View our wine aging chart to see our recommended drinking time per wine.
Serving
When it comes time to open your wines, the following tips that we use in our tasting room will help your wine show its full potential while serving your wine at home.
Opening
If you open any of the red wines within the first five years, we recommend opening the wines 24 hours prior, enjoying a small glass, re-corking the bottle, and letting it lay horizontally overnight. For the white and rosé, it is best to enjoy it immediately.
Temperature
For the reds, we advise serving them at a temperature between 60ºF and 62ºF to enjoy the full flavor. The white is best served between 52ºF and 54ºF and the rosé is best served between 48ºF and 52ºF for peak freshness.
