Winter in Paso Robles has officially come to a close! Before we turn the page to a new season, we’re taking a moment to reflect on the highlights of the season—tending the vineyard, bottling new vintages, unveiling exciting releases, and crafting new experiences for you to enjoy. As we step into the year ahead, we’re filled with anticipation for what’s to come and can’t wait to share it all with you!



Updates from our York Mountain Estate
Winter has been a season of preparation as we gear up for an exciting year. Last summer, we planted 20 acres of rootstock, and this spring, we’ll take the next step—grafting these vines to Cabernet Sauvignon, Cabernet Franc, Sauvignon Blanc, Syrah, Grenache, Merlot, and a few other surprises. This winter has been all about laying the groundwork, from cultivating and enriching the soil to installing upper trellising wires for optimal canopy management.
In May, our team will begin the process of grafting each vine by hand. Grafting combines two separate vine components - the rootstock - which forms the plant's root system - and the scion - which produces the desired fruit. Combining the two creates a single, thriving plant. First the rootstock is cut just above the ground to create a smooth surface, and then the scion is carefully trimmed to fit the rootstock. The two pieces are aligned precisely and bound together with grafting tape to hold them in place while they heal. Over time, the graft forms a strong connection between the rootstock and the scion.
With each step, we’re shaping the future of our estate, and we can’t wait to see these vines grow and thrive. We anticipate our first small harvest in about three years, and our first estate wine in about 6 years—a milestone that will mark the beginning of an exciting new chapter for BENOM Wines!



A new YEar Brings New Wine Releases
2022 Reflet
2025 is off to an exciting start in the tasting room! A highlight of our spring allocation was the debut of Reflet—a Syrah and Cabernet Sauvignon blend that sold out almost instantly. Named for how Syrah and Cabernet Sauvignon mirror each other in power and character, Reflet pays tribute to these two iconic French varietals. We were thrilled with its reception and can’t wait to share the 2023 vintage with our members next spring!
2022 Hoc & Muze
Alongside Reflet, we also released new vintages of Hoc and Muze in our spring allocation. Hoc, a Carignan-based blend, and Muze, a Mourvèdre-based blend, are both member favorites. Only a small amount remains, and once they're gone, they won’t be back until next spring.
2024 Contrast & 2024 L'Essor
Just in time for spring, we've released new vintages of our white and rosé wines; L’Essor, a bright and fresh rosé of Grenache and Cabernet Sauvignon and Contrast, a Chardonnay-Sauvignon Blanc blend that beautifully balances two distinct varietals.
Coming Soon: 2023 Eclat
One release that we are perhaps most excited for this year is the 2023 Éclat. Named for the French word meaning "brilliance," Éclat is a radiant expression of the Chablis style, highlighting Chardonnay's purity and elegance. An extra year of aging in the bottle means we are releasing this wine in its optimal drinking window. With minuscule production, this special wine which will be released exclusively to our Club Members this April.


Winter in the Vineyard: Pruning for the season ahead
Even in dormancy, the vineyard is alive with activity. During this season, our team carefully hand-pruned each vine, shaping the upcoming vintage with precision.
There are two main pruning techniques—cane and cordon pruning. Each method plays a crucial role in vine health and fruit quality, and each has its own benefits. We primarily use the Cane pruning method, as it is the preferred method for Cabernet Sauvignon - the varietal we work with most. Cane pruning allows us to control the vine's vigor, producing more consistent yields. We use the cordon method for varieties that produce higher yields, such as Grenache and Mourvèdre.
Cane pruning is a meticulous technique that shapes the vine’s growth for the season ahead. Rather than maintaining permanent arms, we select one or two healthy canes from the previous year’s growth and carefully trim away the rest. This method helps control yield, enhance fruit quality, and encourage balanced vine vigor—an essential step in crafting expressive, high-quality wines.
Cordon pruning is a more permanent approach, where we establish a framework of horizontal “arms” along the vine. These arms are trained to grow along the trellis, allowing for consistent fruit production year after year. By cutting back the new growth to maintain a balanced structure, this method ensures a steady supply of high-quality fruit while promoting healthy vine development throughout the seasons.
Every cut we make now lays the foundation for the next vintage!


Racking, Blending and Bottling in the Winery
In the winery we've just completed an exciting stage - racking and blending our 2023 red wines.
Last December, Guillaume and Arnaud tasted through every barrel, carefully selecting the perfect combinations for our blends. After creating the blend "recipes", the wine was left to age in barrel, continuing to develop complexity.
Last week, we moved the wines from barrel to tank in a process called racking. Racking removes sediment (also known as lees) and naturally clarifies the wine. As the wines were transferred, the final blends were created on a larger scale. Now, they will rest in tanks for the next few weeks, allowing flavors to fully integrate before bottling - bringing balance, depth and cohesion to each blend.
We also bottled our newest vintages of L'Essor and Contrast earlier this year. We released the new 2024 vintages to our club members in the Spring Allocation. L'Essor is our current tasting flight, and you can find Contrast in the tasting room later this year.
